I reside in the State of Florida. Outside of my 9 to 5, I am a licensed
professional boxer. During 2007, 1 of my fights was in Manhattan, New
York. I was paid a little over $7,000 for this fight. All of my
previous fights have been in Florida, and I complete a Schedule C to
attach to my 1040 for my US tax return. Since Florida has not State
income tax, I don't file locally.
I received the 1099 from the promoter in New York for what they paid me.
I did inculde that in my US 1040. Do I have to file a tax return for
the State of New York? What about a city tax? If I have to file a
return for New York, do I complete a schedule C with only those expenses
that were related to that 1 fight?

Oh yes you do. And they'll hunt you down if you don't, and you'll only wish
they had on boxing gloves so you can defend yoruself.
New York is one of the worst.

New York non-resident returns have two columns, one that relates to the
federal return, and the other for ~just~ the New York income (or loss).
Everything from your federal return goes in that one column and the $7,000
(less allocated expenses of your boxing business) go in the NY column.
Be sure to follow down the form carefully adding or subtracting those things
that you are allowed to (or required to) do.
Also, it's possible that there is some exception or exclusion for
professional athletes, so look into that.

You're looking for the IT-203, and take a gander at the IT-203A which is how
you allocate the expenses if you don't have the actual expenses paid to
generate that NY money.
New York city tax returns also need to be filed - Form NYC-202, found here.

New York City income tax only applies to residents of New York City. There
is no New York City income tax for nonresidents.
